Serves / Makes: 6 - 8 servings |

Ingredients |
- 6 slices sliced cooked bacon (crumbled)
- 1 potato shredded (use cheese grater)
- 6-8 eggs
- ¼ cup milk
- ½ cup shredded Parmesan cheese
(the fresh kind) divided
- 1 cup cheddar shredded
- Dash salt & pepper
Optional: chopped veggies are great sprinkled in. Just don't add too
many or you will lose the wonderful flavor of the bacon and cheese.

Preparation |
- Preheat oven to 350°
- Spray a square baking dish with non stick cooking spray (or butter).
- Cook bacon and crumble. Set aside.
- Grate potato with a cheese grater and spread in bottom of pan.
- Sprinkle bacon on top.
- In a mixing bowl, mix eggs, milk, salt & pepper, cheddar, and half
the Parmesan.
- Cover with aluminum foil and bake about 30 - 40 minutes until center
is no longer runny.
- Remove foil, and cover with remaining Parmesan cheese.
- Bake 10 - 15 minutes until cheese is melted and bubbly.
- Cut into squares, and serve warm.
