Breakfast Casserole

Serves / Makes:  6 - 8 servings
 
Ingredients
  • 6 slices sliced cooked bacon (crumbled)
  • 1 potato shredded (use cheese grater)
  • 6-8 eggs
  • ¼ cup milk
  • ½ cup shredded Parmesan cheese (the fresh kind) divided
  • 1 cup cheddar shredded
  • Dash salt & pepper

    Optional: chopped veggies are great sprinkled in. Just don't add too many or you will lose the wonderful flavor of the bacon and cheese.
 
Preparation
  • Preheat oven to 350°
  • Spray a square baking dish with non stick cooking spray (or butter).
  • Cook bacon and crumble. Set aside.
  • Grate potato with a cheese grater and spread in bottom of pan.
  • Sprinkle bacon on top.
  • In a mixing bowl, mix eggs, milk, salt & pepper, cheddar, and half the Parmesan.
  • Cover with aluminum foil and bake about 30 - 40 minutes until center is no longer runny.
  • Remove foil, and cover with remaining Parmesan cheese.
  • Bake 10 - 15 minutes until cheese is melted and bubbly.
  • Cut into squares, and serve warm.
