Homemade Banana Pudding

Serves / Makes:   10 - 12 servings
 
Ingredients
  • 2 cups milk
  • 1 ¼ cup sugar
  • 6 eggs separated (yolks in pot/whites in bowl)
  • 2 heaping tablespoons flour
  • 1 tsp vanilla
  • pinch of salt
  • 8 bananas
  • 2 boxes Vanilla Wafers
 
Preparation
  • In a 9 x 13 pan layer in order wafers on bottom then 4 bananas sliced then wafers then 4 bananas sliced then last layer wafers.

Pudding:

  • In a 2 or 3 qt. pot on stove over medium high heat add 6 egg yokes, 1 cup sugar,  2 tsp flour and 2 cups milk, whisk until no lumps and switch to spoon.
  • Stir until it thickens a little and coats the back of a spoon.
  • Turn heat off and add 1 tsp vanilla extract and pour over your banana and wafers.

Meringue:

  • Place 6 eggs whites in a metal or glass bowl that has been chilled in freezer for about 10 minutes.
  • Use hand mixer on high, once starting to foam up add pinch of salt and add sugar a little at a time, until eggs whites gets stiff and form peeks.
  • Spread evenly over your wafer and banana after you put in pudding from stove.
  • Broil in oven for about 1 min to brown the meringue (watch it closely as the sugar will burn quickly).
  • Let cool for an hour and then cover and place in fridge over night and serve the next day.
