No Bake Cookies

Serves / Makes:   24 - 30 cookies
 
Ingredients
  • 2 cups sugar (if you prefer a hard cookie) OR 1 cup sugar and 1 cup Splenda (for a soft cookie)
  • 3 tsp cocoa powder
  • ½ cup milk
  • ½ cup butter
  • dash of salt
  • ½ cup peanut butter
  • 3 cups quick oats
  • 1 tsp vanilla
 
Preparation
  • Combine sugar, cocoa, milk, butter and salt on medium high heat, bring to a boil cooking for about 3 - 4 minutes with a rolling boil.
  • Stir in peanut butter and remove from heat and stir in vanilla and oats.
  • Place by teaspoon full onto wax paper and allow to cool.
  • Store in air tight container and refrigerate.
