Pineapple Pecans Snowballs

Serves / Makes: Approximately 60 - 1 inch snowballs
 
Ingredients
  • 2 - 8 oz  pkgs cream cheese, room temperature
  • 1 - 20 oz can crushed pineapple, drained
  • 2 cups pecans, finely chopped
  • coconut, to coat balls in
 
Preparation
  • Mix softened cream cheese and pineapple together.
  • Add chopped pecans.
  • Refrigerate for 1 hour.
  • Roll mixture into 1 inch or smaller balls and roll in coconut.
  • Refrigerate until you are ready to use.

    *Add food coloring to coconut if wanted for a different affect.
    *Keeps well in the refrigerator for about a week.
