Serves / Makes: Approximately 60 - 1 inch

Ingredients |
- 2 - 8 oz pkgs cream cheese, room temperature
- 1 - 20 oz can crushed pineapple, drained
- 2 cups pecans, finely chopped
- coconut, to coat balls in

Preparation |
- Mix softened cream cheese and pineapple together.
- Add chopped pecans.
- Refrigerate for 1 hour.
- Roll mixture into 1 inch or smaller balls and roll in coconut.
- Refrigerate until you are ready to use.
*Add food coloring to coconut if wanted for a different affect.
*Keeps well in the refrigerator for about a week.
