Scalloped Potatoes

Serves / Makes:   8
 
Ingredients
  • about 7 good sized potatoes
  • 1 stick butter
  • 1/3 cup flour
  • 1 cup Half and Half
  • 1 cup milk
  • Pinch of Nutmeg
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 pkg cheddar cheese, shredded
  • 1 pkg Parmesan cheese, shredded
  • 1 large onion, diced (I use white onion)
  • freshly chopped chives
 
Preparation
  • Wash and cut potatoes as uniformly thin as possible.
  • In a heavy sauce pan melt the butter, add the flour,  stir well.
  • Add half & half and milk, stir well and heat until simmering and thickens.
  • Add nutmeg, salt and pepper.
  • Add a handful of cheddar cheese and pkg parmesan cheese, stir until cheese is melted.
  • Place a thin layer of the mixture on the bottom of a pan making sure all the bottom is covered.
  • Place a layer of potatoes, layer of onions, layer of mixture, layer of potatoes, layer of mixture.
  • Place remaining potatoes if desired.
  • Cover well with the remaining cheddar cheese.
  • Sprinkle chives over the top.
  • Cover pan with foil.
  • Bake 400° for 35 minutes.
  • Remove foil and bake another 15 minutes or until golden brown.
  • Let stand a few minutes before serving.
