- Wash and cut potatoes as uniformly thin as possible.
- In a heavy sauce pan melt the butter, add the flour, stir
well.
- Add half & half and milk, stir well and heat until simmering and
thickens.
- Add nutmeg, salt and pepper.
- Add a handful of cheddar cheese and pkg parmesan cheese, stir until
cheese is melted.
- Place a thin layer of the mixture on the bottom of a pan making sure
all the bottom is covered.
- Place a layer of potatoes, layer of onions, layer of mixture, layer
of potatoes, layer of mixture.
- Place remaining potatoes if desired.
- Cover well with the remaining cheddar cheese.
- Sprinkle chives over the top.
- Cover pan with foil.
- Bake 400° for 35 minutes.
- Remove foil and bake another 15 minutes
or until golden brown.
- Let stand a few minutes before serving.
