Ingredients |
- ˝ cup chopped onion
- 2 Tbsp butter
- 1 cup herb stuffing mix
- 1 cup beef broth
- 2 Tbsp chopped parsley
- 2 beaten eggs
- ˝ tsp pepper
- 2 tsp salt
- 6 Tbsp Parmesan cheese
- 2 lbs meatloaf mix (veal/pork/beef) or ground beef
- 8 oz tomato sauce (optional)

Preparation |
- Sauté onions in butter until soft.
- Combine stuffing and broth and add to cooked onions.
- Place meat in a large bowl and add onions, stuffing, spices, and
cheese.
- Mix until well blended and shape into a loaf (mixture may be fairly
soft).
- Bake at 350° for 1 hour.
- Top with tomato sauce and sprinkle a little oregano (optional) and
bake for 1/2 hr longer.
