Sweet Potato Soufflé

Serves / Makes:   10 - 12
 
Ingredients

Soufflé:

  • 3 (40 oz) cans of yams
  • 2 cups brown sugar
  • 4 eggs
  • 1 cup milk
  • 1 cup butter melted ( 2 sticks)
  • ½ tsp salt
  • 2 tsp vanilla


    Topping - Choice 1:
  • 1 bag  mini marshmallows

Topping - Choice 2:

  • 1 cup brown sugar
  • 4 Tbsp butter, diced (½ stick)
  • ½ cup self rising flour
  • 1 cup pecans, chopped
 
Preparation
  • Preheat oven to 400°.
  • Mix all the soufflé ingredients with mixer and pour into a greased 9x13 pan.
  • If using topping choice 1 - of brown sugar, flour and pecans mix these together and place on top .
  • Bake about 45 minutes until top is golden brown.
  • If using topping choice 2 - just put soufflé mixture in oven for 40 minutes, take out and top with mini-marshmallows and put back in oven for about 3 to 5 minutes but watch it closely as it can burn quickly.
