Whipped Potato Casserole

Serves / Makes:   6 Servings
 
Ingredients
  • 4 to 6 medium potatoes, peeled
  • 2 Tbsp butter
  • 1 pkg (125 g) cream cheese, cubed
  • ½ cup sour cream
  • 3 green onions, finely chopped
  • salt and pepper
  • grated cheese of choice
 
Preparation
  • Boil potatoes until tender, drain.
  • Add butter, cream cheese, sour cream and green onions and mash well.
  • Season to taste with salt and pepper.
  • Spoon potato mixture into a lightly greased baking dish.
  • Sprinkle desired amount of grated cheese on top.
  • Bake at 350° 30 minutes or until heated through.
 
Comments
Once prepared you can cover and refrigerate until ready to bake.
